वेसवारम् 

vesavAram - Flavouring Agent

वेसवारं सुगन्धकर्तृ पक्वम्। तस्य निर्माणं कथं करणीयम् इति पश्यामः।

vesavAram is a flavouring agent which can be added in all preparations.  

मूलश्लोकाः - Original Verses 
हिङ्ग्वार्द्रमरिचं जीरं हरिद्रा धान्यकं तथा। १.४२B
क्रमेण् वर्धितं सर्वं वेसवारमिदं शुभम्।
स्तोकेन वारिणा सर्वं वण्टितं वस्त्रगालितम्॥ १.४३
मात्रया व्यञ्जने देयं कासमर्दं च तत्स्मृतम्।
तप्तस्नेहे पचेत्पूर्वं वेसवारकसंज्ञकम्॥ १.४४

अन्वयः - Prose Order

पूर्वं हिङ्गवार्द्रमरिचं जीरं हरिद्रा तथा धान्यकं सर्वं क्रमेण वर्धितं तप्तस्नेहे पचेत्।सर्वं स्तोकेन वारिणा वस्त्रगोलितं वण्टितं इदं शुभं वेसवारम् (भवति)। व्यञ्जने मात्रया देयं, कासमर्दं तत्स्मृतं वेसवारकसंज्ञकम्। 
हिङ्गुः –Asafoetida , आर्द्रम् – Fresh Ginger, मरिचम् – black pepper, जीरम् – cumin seeds, हरिद्रा – turmeric, धान्यकं –

All these in the said order increasing in proportion to be cooked in heated sesame oil.

The separated, adding little water and by straining with a cloth is pleasant vesavaaram. In measured quantity in the preparation in hand be added, known for suppressing cough is vesavAram.

Ingredients: 

  1. Asafoetida    - Little
  2. Fresh Ginger - more than 1 - Asafoetida 
  3. Black Pepper (slightly crushed) - more than 2
  4. Cumin Seeds - more than 3
  5. Turmeric Powder - more than 4 
  6. Coriander Seeds - more than 5
  7. Sesame Oil - enough quantity to fry these items

Method:

Heat the oil like how we do for tadka then add the ingredients to the heated oil and slightly stir for 1 minute,  remove it from the flame. Sprinkle little water to the the mixture and strain it with a cloth. 

The resultant mixture is VesavAram. Add this mixture to all the preparations like vegetables -subzi, curry, Daal, Kadi, Sambar, Rasam etc.,.

Health Benefits:

Known for suppressing the cough when used regularly.
