वृन्ताकम्

Brinjal

मूलश्लोकः क्षेमकुतूहलात्

सर्वासां शाकजातीनां वृन्ताकं शाकनायकम्।

अतः शाकक्रमं त्यक्त्वा प्रथमं नायकं वदेत्। ८.१२

Of all the vegetable species Brinjal is the king of the vegetables. Hence one should tell about the king leaving the order of the vegetables. 

भोजनं धिगवृन्ताकं वृन्ताकं धिगवृन्तकम्।

सवृन्तं धिगतैलाढ्यं तैलाढ्यं धिगरामठम्॥ ८.१३ 

पदच्छेदः

भोजनम् धिक् अवृन्ताकम् वृन्ताकम् धिक् अवृन्तकम्।

सवृन्तम् धिक् अतैलाढ्यम् तैलाढ्यम् धिक् अरामठम्॥

भोजनम् – meal,धिक् – fie ,अवृन्ताकम् – न वृन्ताकम् without brinjal, अवृन्तकम् – without stalk, सवृन्तम् – वृन्तसहितम् – with stalk, अतैलाढ्यम् – not cooked in oil, अरामठम् – हिङ्गुरहितम् – without asafoetida

Fie the meal which without brinjal, fie the brinjal witout its stalk, fie the brinjal with stalk if it is not cooked in oil, fie the brinjal with stalk and cooked in oil if it is not with asafetida

That explains why my mother always used to cook brinjal with stalk and the specialty was Ennai Kathirikkai - ennai (in Tamil) – oil, Kathirikkai (in Tamil) - brinjal.
