गौरीतक्रम् 

gauritakram - Buttermilk

तक्रेण कृतं पानकम् - गौरीतक्रम् ।

मूलश्लोकः 

 विश्वामरीचलवणजीरनारङ्गजत्वचाम्।

चूर्णान्वितं च तत्तक्रं धूपयेत्तप्तहिङ्गुना।। १२.८४

पदच्छेदः

विश्वा-मरीच-लवण-जीर-नारङ्गजत्वचाम्। विश्वा – dry ginger, मरीचम् – black pepper, लवण – Salt, जीर - cumin seeds, नारङ्गज-त्वच - peel of orange, चूर्णान्वितम् – containing the powder, तत् - that, तक्रम्  -buttermilk, धूपयेत् तप्तहिङ्गुना – fumigate with asafoedita fried in ghee

Ingredients

Buttermilk  

Dry Ginger, black pepper, Cumin seeds - Powdered

Asafoedita - little

Ghee to fry asafoedita

Method

Fumigate the buttermilk, by asafoetida fried in Ghee, which is mixed with the powder of dry ginger, black pepper,salt & peel of orange/lime/lemon. But what is buttermilk? Is it Buttered Milk?
Or water added to curds is buttermilk? No, but curds after churning out the butter mixed with equal quantity of water is तक्रम् - buttermilk. Why is it called गौरीतक्रम्? The answer in the श्लोकः below. J

 क्षेमकुतूहलात् १२.८५

 पार्वत्या विहितं तक्रं सर्वदोषनिबर्हणम्।

सुरुच्यं पाचनं दिव्यं महेशस्य महाप्रियम्।। १२.८५

पार्वत्या विहितम् – prescribed by पार्वती, तक्रं – buttermilk, सर्व-दोष-निबर्हणम् –annihilating all the three दोषाः, सुरुच्यम् – very tasty, पाचनम् – digestive, दिव्यम् – heavenly,  महेशस्य महाप्रियम् – very much liked by Lord Shiva.

अन्वयः

पार्वत्या विहितं सर्वदोषनिबर्हणम् सुरुच्यं पाचनं दिव्यं तक्रं महेशस्य महाप्रियम् गौरीतक्रम् ।

तक्रं prescribed by Parvati is great in annihilating all the three दोषाः। दोषाः – कपम्, वादम्, पित्तम्  

 It is appetizing,digestive,heavenly, very tasty and very much liked by Lord Shiva.
