पक्ववटी 

कढि पकोडा

पक्ववटी - Pakoda – पक्वा वटी। वटी - little round ballपक्ववटी -cooked वटी। 

So वडा round in shape. Now we understand origin of the word वडा is not from  Southern part of India. But संस्कृतपदम् - Samskrit word.


The recipe given is named as पक्ववटी – Pakoda. But actually it is our कढि पकोडा। यदा श्लोकं पश्यामः तदा ज्ञायते।

मूलश्लोकः

तोयेन वेसनं लोड्यं मथितं हिङ्गुना सह।
तप्ततैले प्रदातव्या वट्यामलकमात्रया॥ ९.२८

पदच्छेदः

तोयेन – with water, वेसनम् – besan, लोड्यम् – stirred, मथितम् -churned/agitated, हिङ्गुना सह – 
with asafoetida, तप्ततैले – hot oil, प्रदातव्या – caused to put, वट्या – in spherical, आमलकमात्रया – size of आमलकः।   

अन्वयः

हिङ्गुना सह तोयेन लोड्यं मथितं वेसनं आमलकमात्रया वट्या तप्ततैले प्रदातव्या। 

Meaning

Besan stirred/churned with water along with asafetida is caused to put in hot oil in the shape of small balls of the size of आमलकः। 

मूलश्लोकः

वेसवारयुते तक्रे क्वथिते वेसनान्विते।
तत्र सा वटीका क्षिप्ता नाम्ना पक्ववटी स्मृता॥ ९.२९ 

पदच्छेदः

वेसवारयुते तक्रे - Buttermilk with वेसवारम्, वेसनान्विते क्वथिते – The liquid made to boil with Besan, तत्र – in that, सा वटीका – that ball (mentioned in earlier श्लोकः) क्षिप्ता – dropped, नाम्ना – by the name, पक्ववटी -  pakoda,स्मृता – is known.

अन्वयः

सा वटीका वेसवारयुते तक्रे वेसनान्विते क्वथिते क्षिप्ता पक्ववटी नाम्ना स्मृता। 

Meaning

The small balls of besan said earlier are dropped into the liquid, containing Besan made to boil along with Buttermilk which is mixed with वेसवारम्.

Ingredients 

Besan 
Buttermilk
वेसवारम् - VesavAram
Oil to fry
Asafoetida
Salt to Taste in Kadhi - कढि

Method 

1. Make a thick batter of  besan by adding water along with asafoetida. The consistency has to be such that we can make small पकोडाs by dropping them in  hot oil.
2. In hot oil, drop the batter so as to make पकोडाs  - pakodas.
3. Preapare a क्वथितम् - broth made out of buttermilk with besan. Flavour the buttermilk with वेसवारम् - vesavAram.
4. Drop the pakodas into the broth - कवथितम् and  let it cook.
 पक्ववटी - कढि पकोडा  will be ready.
