समोसा

अथ  प्रसिद्धस्य खाद्यस्य पाककृतिं पश्याम। 

मूलश्लोकः

मण्डकस्य कृता पट्टी पुरणेन प्रपूरिता।
वेष्ट्या शृङ्गाटकाकारं सन्धिं लिम्पेत्कनिष्ठया॥ ६.१३१ 

पदच्छेदः

मण्डकस्य – of the dough, कृता – made, पट्टी – thin spread, पूरणेन – with the filling, प्रपूरिता – well filled, वेष्ट्या – by wrapping, शृङ्गाटक-आकारं - conical in Shape, सन्धिं – edges, लिम्पेत् – plastering, कनिष्ठया – by little finger.

अन्वयः

मण्डकस्य पट्टी कृता पूरणेन प्रपूरिता (वेष्टिः)। वेष्ट्या शृङ्गाटकाकारं सन्धिं कनिष्ठया लिम्पेत्। 
The recipe is not yet complete we will look at the next श्लोकः and understand the meaning as a recipe.

मूलश्लोकः

घृते भृष्टा समोसेति नाम्ना चष्टे हि सूपकैः।सुरुच्या वातजित्बल्या वृष्या पित्तापहा गुरुः॥ ६.१३२ 

पदच्छेदः

घृते भृष्टा – fried in ghee, समोसा इति – as समोसा, नाम्ना – by name, चष्टे – call, सूपकैः – by the cooks, सुरुच्या – tasty, वातजित् – which alleviates वातः, बल्या – which imparts strength, वृष्या - aphrodisiac पित्तापहा - which alleviates पित्तम्, गुरुः – heavy.

अन्वयः

सूपकैः घृते भृष्टा सुरुच्या वातजि बल्या वृष्या पित्तापहा गुरुः समोसा इति नाम्ना हि चष्टे।

Ingredients: 


Fine Wheat Flour  
Salt to taste
Boiled potatoes
Speices for flavour and taste
Ghee for frying

Method

Make dough of fine wheat flour with little salt. Then make it into a thin spread. Fold it in a conical shape and fill it with appropriate fillings like boiled potatoes with required spices. Plaster the edges with the little finger, fry it in ghee. The tasty Samosa alleviates vata and pitta disorders, imparts strength and is aphrodisiac & heavy.

पक्ववटी 

कढि पकोडा

पक्ववटी - Pakoda – पक्वा वटी। वटी - little round ballपक्ववटी -cooked वटी। 

So वडा round in shape. Now we understand origin of the word वडा is not from  Southern part of India. But संस्कृतपदम् - Samskrit word.


The recipe given is named as पक्ववटी – Pakoda. But actually it is our कढि पकोडा। यदा श्लोकं पश्यामः तदा ज्ञायते।

मूलश्लोकः

तोयेन वेसनं लोड्यं मथितं हिङ्गुना सह।
तप्ततैले प्रदातव्या वट्यामलकमात्रया॥ ९.२८

पदच्छेदः

तोयेन – with water, वेसनम् – besan, लोड्यम् – stirred, मथितम् -churned/agitated, हिङ्गुना सह – 
with asafoetida, तप्ततैले – hot oil, प्रदातव्या – caused to put, वट्या – in spherical, आमलकमात्रया – size of आमलकः।   

अन्वयः

हिङ्गुना सह तोयेन लोड्यं मथितं वेसनं आमलकमात्रया वट्या तप्ततैले प्रदातव्या। 

Meaning

Besan stirred/churned with water along with asafetida is caused to put in hot oil in the shape of small balls of the size of आमलकः। 

मूलश्लोकः

वेसवारयुते तक्रे क्वथिते वेसनान्विते।
तत्र सा वटीका क्षिप्ता नाम्ना पक्ववटी स्मृता॥ ९.२९ 

पदच्छेदः

वेसवारयुते तक्रे - Buttermilk with वेसवारम्, वेसनान्विते क्वथिते – The liquid made to boil with Besan, तत्र – in that, सा वटीका – that ball (mentioned in earlier श्लोकः) क्षिप्ता – dropped, नाम्ना – by the name, पक्ववटी -  pakoda,स्मृता – is known.

अन्वयः

सा वटीका वेसवारयुते तक्रे वेसनान्विते क्वथिते क्षिप्ता पक्ववटी नाम्ना स्मृता। 

Meaning

The small balls of besan said earlier are dropped into the liquid, containing Besan made to boil along with Buttermilk which is mixed with वेसवारम्.

Ingredients 

Besan 
Buttermilk
वेसवारम् - VesavAram
Oil to fry
Asafoetida
Salt to Taste in Kadhi - कढि

Method 

1. Make a thick batter of  besan by adding water along with asafoetida. The consistency has to be such that we can make small पकोडाs by dropping them in  hot oil.
2. In hot oil, drop the batter so as to make पकोडाs  - pakodas.
3. Preapare a क्वथितम् - broth made out of buttermilk with besan. Flavour the buttermilk with वेसवारम् - vesavAram.
4. Drop the pakodas into the broth - कवथितम् and  let it cook.
 पक्ववटी - कढि पकोडा  will be ready.

चन्द्रप्रभा-पायसम्

chandraprabhA - Sweet Dish cooked in Milk

अथ चन्द्रप्रभा-पायसम्। Now its about chandraprabhA - Sweet Dish cooked in Milk.  

पायसम् इत्यस्य अर्थः कः? Why पायसम् is called so? 
पयसा पच्यते इति पायसम्। पयः – Milk। As पायसम् is made out of milk, it is called so. J
अस्तु श्लोकं पश्याम। 

मूलश्लोकः 

शुभेऽर्धक्वथिते दुग्धे घृताक्तान् तन्डुलान्न्यसेत्।संसिद्धा मधुसंसिक्ता क्षीरी चन्द्रप्रभा भवेत्॥ १२.१ 

पदच्छेदः

शुभे – good/pure, अर्धक्वथिते – partly boiled, दुग्धे – in the milk,  घृताक्तान् – smeared with Ghee, तन्डुलान् – rice grains, न्यसेत् -should put , संसिद्धा –well prepared, मधुसंसिक्ता –added with honey,क्षीरी – milk-dish चन्द्रप्रभा –moonlight,भवेत् – should become 

अन्वयः

घृताक्तान् तन्डुलान् शुभे अर्धक्वथिते दुग्धे न्यसेत्। संसिद्धा मधुसंसिक्ता क्षीरी चन्द्रप्रभा भवेत्। 

Meaning

Rice grains smeared with Ghee is put in pure partly boiled milk. When well prepared with the addition of honey, it should become the milk-dish चन्द्रप्रभा

मूलश्लोकः

कुङ्कुमं च विनिक्षिप्य पचेत्पीतत्वहेतुना।चन्द्रप्रभाकृतिः क्षीरी रक्तपित्तविनाशिनी॥ १२.२  

पदच्छेदः

कुङ्कुमम् –saffron, – also/and, विनिक्षिप्य – by adding, पचेत् – should cook, पीतत्व-हेतुना – to get yellowish hue, चन्द्रप्रभाकृतिःचन्द्रप्रभा dish, क्षीरी –milk-dish, रक्त-पित्त-विनाशिनी – cures bleeding disorders

अन्वयः

पीतत्वहेतुना कुङ्कुमं च विनिक्षिप्य पचेत्। क्षीरी चन्द्रप्रभाकृतिः रक्तपित्तविनाशिनी।

Meaning

One can add Saffron to it to impart yellowish hue. This Milk-dish resembling the moonlight cures bleeding disorders.


Did you notice one thing? In this sweet Milk-dish only honey is added. No Sugar or jiggery. This has to be a wonderful healthy dish.

Ingredients

Rice
Ghee - Clarified Butter - little to smear over the rice 
Milk 
Honey - enough to sweeten the dish 
Saffron - Colouring and flavouring agent

Method

1. Put the rice grains smeared with Ghee in pure partly boiled milk. 
2. When the rice is well cooked add honey. 
3. Add Saffron to make the dish with yellowish hue.

The resultant dish is चन्द्रप्रभा क्षीरी।
